今天工作需要护送一个病人到另一家医院接受治疗。我主动要当护花使者,因为这个差遣其实很好办。一方面可以出去兜风,另一方面又可以到其他的医院去参观。虽然大致上我的病人的体格都要大我两三倍,我实在不在意当护花使者的,照理他们倒要护我这朵花才对嘛。今天要护送的是一位比较有暴力倾向的病人,所以临走前上司嘱咐万一病人路上凶性大发要跳车逃跑,就让他跑吧,别去追,追的工作就交给警察。说真的,我那里可能追得上啊!大概一个小时后,我回到单位时,我的上司很安慰的跑来抱了我一下,说我终于平安回来了。我很好奇干嘛要抱抱啊?后来才发现原来在我走后,他们接到了一通电话,说是有病人跳了,不是跳车是跳楼!所以他们担心那是我的病人逃跑后去跳楼。哎哟,真的可别这样倒霉啊!以前,没有接触过这样的事务,都不知道很多人背后有着很大的悲哀和痛苦导致他们生不如死,又有很多人却是有很大的冲动,最后做出很不理智的决定。
说到冲动,我昨天也犯了这毛病。还好我的冲动是往好的方面去啦。看到姐姐的blog(Jane's Corner)竟然放上烧包这东西,我的冲动一时失控,第一时间就拿面粉,拿秤,快快开工咯。我没做过油皮水皮这东西,每次看到油皮水皮就先打退堂鼓。当然一份好的食谱也是成品的关键。谢谢Jane的好食谱,没白费我的一番心机。拿捏的技巧还要好好的磨练。这次我给自己打过关的分数。下一次还要把拿捏的工夫下一番心思才行。我吃的口味比较重,所以在馅料多下了一些酱料。
材料:
馅料:
- 鸡肉粹300g,大葱1 粒(切丁),1/2碗青豆, 耗油,麻油适量,太白粉,黑酱油,甜黑酱油,叉烧酱, 胡椒粉
- 油皮:面粉240g, 菜油45g, 细砂糖1大匙, 水108ml
- 油心:低筋面粉120g , 白油85g
- 油皮:将全部材料搓揉至光滑,休面30分钟。
- 油心:将面粉级白油拌匀。(不要拌太久,不然会很黏)。
- 把水皮和油皮分别分割成20份。(油皮约21g, 油心10-11个g)
- 取一份水皮包入一份油皮。杆长,卷起,重复再做一次。 两端折进成圆球状。休面10分钟。
- 将粉团擀成圆形,包入馅料,做成包子形,扫上蛋液;放入烤箱,炉温200℃、烤约25-30分钟至金黄色,即完成。
- water dough: 240g plain flour, 45g corn oil/veg oil, 1 tbsp fine sugar, 108ml water
- oil dough: 120g low protein flour, 85g shortening
- Fillings: 300g organic chicken mince, 1 onion (diced), 1 cup green peas, 1tbsp oyster sauce, 2tbsp hoisin/char siu sauce sauce, 2 tbs soy sauce, 1 tsb dark soy sauce , 1tsp kichap manis, 1 tsp sesame oil, pepper to taste ( 2tsp corn flour and 2 tsp water )
Methods:
- To prepare fillings, heat oil in pan, sauté onion for 2 mins. Add in chicken and stir fry till brown.
- Add in some oyster sauce and water, cook for another 2 mins. Add in green peas and seasoning, stir well. Simmer for 3 minutes and add in corn flour water to thicken up the sauce
- Transfer to plate and allow to cool. Set aside for later use.
- To prepare oil and water dough, separately using the same method bring together all ingredients for each dough, mix well and knead to form soft dough. Cover and let them rest for 30 minutes. Then divide and shape each dough into 20 equal portions.
- Wrap water dough around oil dough. Roll it out into rectangle, then roll up from the short end, repeat this step again.
- Roll it out into a circle and wrap with the filling. Pleat and pinch to seal.
- Egg wash and sprinkle with some sesame seeds on the top of shao bao before baking in preheated oven to 200C and bake for 20 minutes till golden brown.
