Putu Piring (Kueh Tutu)




在我上眉豆糯米糕后,很多朋友都回没吃那个糕点,得有点奇怪,以自己上菜了。好一位六甲的朋友在留言里告我那个糕真的好像只有六甲才有,我才得安心。今天上的是Putu Piring, 个因不会是六甲才有的吧!!Putu Piring在新加坡是称Kueh Tutu (我也不知到什么在来西亚这kuih Putu做的而新加坡是由Tutu来做). 实说我也有听人家叫个糕Kutu Piring嘻嘻!管他Putu,TutuKutu,其实他们都是属于同一种糕点。在六甲的摆摊卖Putu Piring的不是很多。但是想到要吃糕点是,一定是想到Tengkera那一摊卖了几十年的Putu Piring. 我很个糕,得曾一度天天道,后来可能吃腻了,就又很久都没上那档口。Aspiring 个月的主traditional kuih在令我沟起了很多在六甲生活的回忆。那天做糕时感触流泪了,因为在这里,做糕要自己做,自己吃,好像很惨,也很想家!


这个糕我先后试蒸了两次,第一次没有盖上湿布,蒸出来的糕很干。第二回就用water bath的方式,在托盘上加些水和在糕上盖上湿布,保持糕的湿度。传统的Putu Piring 模也是用湿布裹着蒸糕点才能保持糕的湿嫩。



Kuih: 

2 cups of rice flour 
160 ml water + 1/2 tsp of salt, mixed well 
6 pandan leaves, torn into pieces 

Filling: 
1/3 cup of desiccated coconut with 1/2 tsp of salt, steamed 
150 g gula melaka

For serving: 
banana leaves 
1/3 cup grated coconut 

Method:

1. On a big wok, fried rice flour with pandan leaves over medium high heat for about 3-4 minutes. Take out the leaves and leave it to cool. 

2. Combine finely grated gula melaka and grated coconut. 
3. Pour water on to the roasted flour. Using a sieve, press the dough through to form A breadcrumd texture. 

4. Take a spoonful of rice crumble onto the mould. Add in 2 tsp of gula melaka filling and cover it with another spoonful of rice crumble. 

5. Use water bath method and cover kuih with wet cloth and steam for 5 minutes. Serve on a banana leaf and sprinkle with steamed grated coconut.

这个食谱请参考。做法稍微做了一些更改。


Fried rice flour with pandan leaves for 4 -5 minutes


Sift rice mixture to become a fine rice crumble 


 Make sure the rice crumble fully covered the bottom of the mould before adding gula melaka mixture. Or else if gula melaka mixture touches the bottom of the mould, kuih will break on the surface and difficult to separate from mould。  

I pour some water into the steam tray (to create a water bath) and cover the kuih with wet towel to preserve the moisture of the kuih.

  3. 鲸鱼啊,感不感性就不知道了,眼袋确实是很浅,容易掉泪。看悲剧也可以回房间继续哭。你婚后搬到新山去应该也会想念老家吧?

    虽然想吃就要自己动手,但没关系啦!我在远远的这里,近近的望着你的糕点,假假的帮你吃咯,哈哈!

  11. Aiyoo, this one you also can make, sama kakak awak, sangat pandai buat kuih, hehehe. Last time I saw in Ah Xian cooking show introduce this , but they use blended rice to make this. Let me find the link for you later.

  17. Ann,已经不知到还能做什么kueh了,就做kueh tutu咯!呵呵!这个食谱大概可以做到10-11个蛋挞模的Tutu。:)

  20. I'm really happy to see your putu piring recipe here, as i have been hunting high and low but to no avail. We call this kuih tutu /putu piring in KL,but is rarely seen nowadays, I saw the program in Ah Xian and drive all the way to Jln Tengkera ,Melaka,to savour the famous putu piring there.
    When i was studying in Melbourne, i only get to learn how to cook and bake, but truly enjoy the process,so it is good at least you have your sister with you here.

  26. Hi Lishuan, 请问你用那个牌子的RICE FLOOR? 上个星期日, 我试了几次,出来的KUIH有点硬, 更可怕的是有点黄 .... :( 我用的是水磨粘米粉 •••不知道对吗•• 哈哈

  27. 哎哟,怎么会发黄的呢? 我的水磨沾米粉是用三象牌子的。 记得一定要把托盘放些水然后把涩布把糕盖着才下去蒸。不然糕会硬。因为粉吸收水份会不同,在水份那里调整一下就可以了。

    1. 啊哈!你这样讲我就明白问题可能出现在那里了。 你看到我的稿子里也提到我第一次没有用steam bath的方式蒸,出来的糕干干硬硬,第二次我就用了一个托盘装了水然后把装了糕的模子放在装了水的托盘里然后盖上涩布,再将整个托盘放在蒸笼上蒸。(你看到我最后那张照片那个托盘,是还没加水的。 在蒸之前倒一些热水在托盘里,这就是说你的小putu模和水是接触的, 然后整个托盘进蒸笼)。 对不起,没有详细的step by step 图。

      正如你所说,你的整盘是有洞的,那么你一定是把小塔模直接放在整盘上蒸熟,这样的话就没有steam bath了哈哈!是直接steam没有bath哈哈! okok, 不讲笑,你再试试看吧。

      发黄的米粉还不可怕,最怕是买到有蟑螂味道的很geli。
