前天和好友Wing谈电话时,她说她下个月来Perth时要吃相思蛋糕。哎唷,Wing啊,这么多蛋糕不选为什么偏偏选中那个会时好时坏的蛋糕呐! 我跟她说了我还要多练习一下才能做给她吃。
Crystal给的任务今天终于完成,要我挑战水浴法,挑战双色相思,我一一挑战完毕了哈哈! Crystal, 我听话了吧!
针对我自己的烤箱而言,我比较喜欢用中下层烘,那么表皮比较容易上色也不会倒扣时蛋糕皮黏在架上了。我也比较喜欢蒸烘式的做法,蛋糕不会过于润湿,口感是我较喜欢的。但是蒸烘式的方法容易出现脸破裂的迹象。我之前提过的baking strips 是一个很大帮手。
材料:
可可粉1tbsp 加热水10ml (待凉备用)
1 大匙柳橙削和1 小匙橙味香精 (备用)
(A)
粟米油 45g
奶水 60ml
盐 1/4tsp
蛋黃 100g
全蛋 1 粒
特幼面粉 65g
B:
蛋白 200g
幼糖 65g
塔塔粉 1/2tsp
做法
1) 将粟米油+奶水+盐+蛋黃+全蛋搅匀。
2) 加入特幼面粉再搅拌均匀,分成两分,一份加入可可酱,一份加入柳橙削和香精,放一邊。
3) 蛋白加入塔塔粉和幼糖打至起湿性发泡(我把蛋白打至蛋白的盆倒反过来,蛋白不跌即可)
4)最后将蛋白分两分,个别加入可可面糊和柳橙面糊拌均勻,倒入铺上纸(没抹油)的7寸方形模,放入烤炉中底层,水蒸式烘160C
60分钟。

stir well (set aside)
Grated orange I tbs and orange blossom essence 1 tsp
A
Corn oil 45g
Milk 60ml
Salt 1/4tsp
Egg yolk 100 g Whole egg 1
Super fine flour/ Hong Kong Flour 65 g
B:
Egg white 200g
Castor sugar 65g
Tartar powder 1/2tsp
Method:
1. Mix together corn oil, milk,
salt and egg yolk.
2. Sift in super fine flour and mix well, divide
mixture into 2 equal portions. One mix with cocoa mixture and the other with
orange essence and grated orange. Leave
aside.
3. Beat egg white with an electric mixer, add in
tartar powder and beat for 30sec. Add castor sugar slowly and continue to beat
until soft peak. (I beat the egg whites until the egg white does not fall when
you over turn the mixing bowl).
4. Divide egg whites into 2 portions, one mix
with cocoa batter and the other with orange batter until just combine. Pour
into a 7" square baking pan (lined with baking sheet at the bottom,(do not
grease the tin), steam-bake in oven at 160'C for 60 minutes.
5. Invert the cake after baking and let it cool
completely before cutting the cake.
