香蕉奥利奥戚风(Banana Oreo Chiffon)

我家少做戚风蛋糕因为老公讲没有cream没有料,没有口感,没有牛油香就是吃空气😠😅

这个香蕉奥利奥🍪戚风赢了✌️,竟然得到赞赏。对,就是把他爱的食材都一一献上,他就开心了。

材料:
A
3 蛋黄
30g 粟米油
35g 牛奶
50g 低粉
5g 粟米粉
80g香蕉

B
3 蛋白
40g 幼糖
1tsp 柠檬汁


C
2片奥利奥饼干(不要夹心,压碎)

D焦糖乳酪鲜奶油霜
100g 鲜奶油
10g 糖粉
100g Philadelphia焦糖乳酪

E
切片香蕉
细砂糖

做法:
1 香蕉加牛奶打成泥,加入玉米油搅拌均匀。 
2)筛入粉类搅匀。再加入蛋黄搅匀。
3)将材料B的蛋白加入柠檬汁,分三次加入细砂糖打至湿性发泡。
4)取1/3的蛋白霜加入蛋黄面糊里,用搅拌器将两者混合。
5)再倒入剩余的蛋白用橡皮刮刀从底部以同一方向,轻轻拌匀。
6)最后把奥利奥饼干碎拌入蛋糕糊。
7)把面糊倒入模型里,轻敲震出大气泡。
8)放入预热烤炉,以155度中下层烘约35分钟,转上火180C2分钟,出炉后即倒扣冷却。
9)制作乳酪鲜奶油,把所有材料D一起打发即可。
10 将切片香蕉撒上一小匙糖,用喷枪烧至焦香上色。


Ingredients
A
3 egg yolks
30g corn oil
35g milk
50g cake flour
5g corn flour
80g banana



B
3 protein
40g castor sugar
1tsp lemon juice

C
2 Oreo biscuits discard cream , crush slightly)

Caramel cream Cheese Icing
100g thickenedcream
10g powdered sugar
100g Philadelphia Caramel cream cheese

E (For decoration)
Sliced bananas
castor sugar

Method:
1) Blend banana and milk till smooth, add corn oil and stir well.

2) Add flour and corn flour into the mixture and mix well. Whisk in egg yolks to become a smooth batter (do not over whisk)

3)Beat egg whites and lemon juice with medium speed. Add in castor sugar in 3 batches. Continue to beat until soft peak consistency.

4)Gently fold 13 of beaten egg white into egg yolk batter, use cut and fold  method until well blended.Then pour the batter back to the rest of the egg white and fold until mixture is well blended. Fold in Oreo crumbs. 

5) Pour the batter into the mould. Bake in pre-heated oven on lower rack155c for 35mins.
Turn the oven to 180C grill function and grill for 2 minutes.

6)Remove from oven, invert cake onto table until completely cooled.   

7)To make cream cheese cream topping: whisk all ingredients D together till soft peak.

8)Sprinkle castor sugar on banana slices, caramelise with blow torch. Decorate the cake with caramelised banana
