上个月出了一个汉堡包cupcake,这次出城竟然发现到 The Cookie & Biscuit Bible里有pizza cookies这个可爱的小玩意,万分的雀跃,所以 一定要在这里分享一下。回来后立即动手做了这个我觉得很有趣的曲奇小饼干。这个食谱是照原作的,我是觉得有点甜,如果有想要试试这个食谱的朋友,糖可要下手轻一些咯!
Cookie Ingredients:
90g unsalted butter
90g soft brown sugar
15ml golden syrup
175g self raising flour (sifted)
Icing :
150g icing sugar
20-25ml lemon juice
red colouring
8 maltesers
3 small green glazed cherries
Marzipan:
1 ½ cups (165g) ground almond
1 ½ cups icing sugar, sifted
¾ cup caster sugar
1 egg white
¼ tsp almond essence (optional)
1 tbsp cold water
Method:
1.) Preheat the oven to 180C.
2.) In a bowl, beat together the butter and sugar until creamy. Beat in the syrup then add the flour and mix to a smooth paste.
3.) Turn the mixture on to a lightly floured surface and cut into 16 even size pieces. Roll each piece into a ball then space well apart on the baking sheets, slightly flattening each one.
4.) Bake for about 12 minutes or until pale golden. Leave on the baking sheet for 3 minutes then transfer to a wire rack.
5.) To make topping, put the icing sugar in a bowl and stir in enough lemon juice to make fairly thick spreadable paste. Beat in enough colouring to make the paste a deep red colour.
6.) To make marzipan place all ingredients in a food processer and pulse until the mixture comes together to form a firm paste. Tint with yellow colour to make “ grated cheese” . Wrap in plastic wrap until ready to use.
7.) Spread the red icing to within 5mm of the edge of the cookies. Sprinkle with shredded marzipan and place a halved Malteser in the centre. Arrange a few pieces of chopped green glazed cherries on top so the cookies resemble little cheese and olive pizza.
